Treating guests to a dining experience rather than merely a meal, there is an art form in enjoying Chef Brancati's dishes. Chef Brancati says: My plates are fully balanced, I do not wish my dishes to be too acidic nor too sweet. I aim to have contrast of flavor along with consistency.
Renowned for his friendly style of service, Jack Gonsalves has developed an outstanding rapport with customers since joining the restaurant as a waiter in 1995.
In 1989, he completed a Hotel Management Course with Cambridge Catering College. Before his move to Hong Kong in 1992, he fine-tuned his service style at the Oberoi Group’s 5-star hotel in Mumbai (Bombay) and various other leading restaurants in the city.
Since joining Va Bene, he has accumulated an extensive
knowledge of Italian cuisine and
wine under the tutelage of Pino Piano.
